Masala Mashed Potatoes recipe

These potatoes are very versatile and will perk up any meal.
3 potatoes
15 ml (1 tbsp) chopped fresh mint and coriander, mixed
5 ml (1 tsp) mango powder
5 ml (1 tsp) salt
5 ml (1 tsp) crushed black peppercorns
1 fresh red chilli, chopped
1 fresh green chilli, chopped
50 g (2 oz) 4 tbsp margarine

1. Boil the potatoes until soft enough to be mashed. Mash them down using a masher.

2. Blend together the chopped herbs, mango powder, salt, pepper, chillies and margarine to form a paste.

3. Stir the mixture into the mashed potatoes and mix together thoroughly with a fork. Serve warm as
an accompaniment.
